1. Wash the fresh Chinese black mushrooms first, squeeze out the excess water and remove stems. Steam for 8 to 10 minutes, remove from heat and set aside. 2. Wash and peel potatoes first, then cut the potatoes into slices. Steam for about 20 minutes and remove from heat. Add pinch of salt and smash the steamed potatoes, then fold in pepper powder, lemon juice, Mayonnaise, yogurt blended. Press mashed potatoes stuffing firmly onto the underside of each Chinese black mushrooms. 3. Arrange, stuffing side up, on a plate. II. Stuffed Mushroom 2.
